Kitchen knives from the Miyabi 5000DP range successfully combine Japanese design with the facilities of Western technology in terms of their care.
The blades are manufactured through special processes that lead to the formation of a design that resembles a work of art. Thus, the blade presents a Damascus model consisting of 64 layers that are wrapped around the hard steel core (CMV60).
The knives are sharpened by hand on a rotating stone and then finished on a piece of leather to form a cutting edge as sharp as that of a scalpel.
The formula of this special steel (CMV60) - produced by Zwilling J.A. Henckels has an optimally balanced composition of carbon, chromium and other components so as to obtain the best combination of hardness, elasticity and corrosion resistance.
