In the strict sense of the word, boiling means the cooking of food in water whose temperature is around 100ºC, the beginning of boiling being indicated by the water bubbles formed on the base of the cooking pot.

Stifled boiling consists of the technique of controlling the temperature of the water so that the boiling point is not reached. The advantage of this cooking method is that no air bubbles are formed, the integrity of delicate foods (such as fish, eggs, vegetables, etc.) is not endangered. For optimal results, the walls of the cooking pot should not transmit heat from the bottom up, from the base to the lid, the heat must be kept inside. The base of a high-quality cooking pot must be a good conductor of heat and distribute it over the entire surface of the cooking pot.

Tips:

1. Do not leave the cooking pot empty on the stove and do not allow water to boil until the cooking pot is dry. This will reduce the performance of the cooking pot (it may deform or melt). The cooking pot must always be used filled with a minimum amount of water.

2. A heated lid should be set face down on a vitro-ceramic hob. Otherwise, the cooling process may create a vacuum that will make it difficult to remove the lid.

3. Undissolved salt can create small indentations (hollows) on the bottoms of steel cookware. Do not leave food with high salt content in your cooking pot.
