Model 312 incorporates the latest technologies developed by Chef's Choice, based on micron-sized diamonds, to ultra-sharpen knife blades in two sharpening stages: one with fine abrasive diamonds and the other with ultra-fine diamonds.
The two-stage sharpening design of Model 312 sharpens the primary edge with fine diamonds to create an initial bevel, before sharpening with ultra-fine diamonds in the second stage, at a slightly larger angle, to develop an edge that is both razor-sharp and exceptionally durable. Diamonds, the hardest materials known, can sharpen knives made from any type of metal, including the hardest carbon steels, stainless steels, and super alloys.
Model 312 can be used for sharpening a wide variety of 20° blades, whether chef’s knives, slicing knives, bread knives, or Santoku knives. It can also be used to sharpen serrated blades of all types, but only by using the second stage, which sharpens the serrations and develops sharp micro-blades along the edge of those serrations.
Model 312 is designed to sharpen household knives, pocket knives, and certain sporting knives. Do not attempt to sharpen scissors, axe blades, or any blade that does not fit freely into the sharpening slots.
Always ensure that the knife blade is thoroughly cleaned before sharpening.
During the Stage 1 of the sharpening process, the fine diamond-coated conical discs create microscopic grooves along the bevels on each side of the blade, establishing the primary tapered edge.
In Stage 2, the precision discs coated with micron-sized diamonds gently hone and polish the bevels immediately adjacent to the edge, creating a micro-bevel along a straight, polished edge of microscopic thickness. The honing action simultaneously polishes and sharpens the boundaries of the microscopic grooves created by the abrasive diamonds in Stage 1, adjacent to the edge, until they become sharp micro-serrations that assist in the cutting action.
The product is precise and safe, with each sharpening slot equipped with flexible springs above the sharpening discs to hold the knife blade securely against the alignment guides.
The knife sharpener should be maintained only by manual cleaning with a damp cloth.
