The Model 120 electric knife sharpener can be used to sharpen a variety of knife blades to a 20° edge angle, depending on their intended use, such as food preparation, fish filleting, or butcher work. It can create Trizor edges (Chef’s Choice’s patented 3-stage sharpening system that produces a triple-bevel, burr-free edge that remains sharp longer than conventionally sharpened knives).

Using 100% diamond abrasives, this knife sharpener enhances cutting performance by creating three distinct bevels set at different angles to form an ultra-sharp, long-lasting edge.

Model 120 is designed to sharpen household knives, pocket knives, and hunting knives. Do not attempt to sharpen scissors, axe blades, or any blade that does not fit freely into the sharpening slots.

For sharpening serrated blades, only Stage 3 is required, in order to avoid removing more metal from the serrations than necessary.

Always ensure that the knife blade is thoroughly cleaned before sharpening.

Stage 1 reshapes straight-edge knives using coarse abrasive discs, while Stage 2 uses medium abrasive discs to sharpen the knife edge. In Stage 3, the patented sharpening discs create an unmatched polished finish.

The complete sharpening process for a knife with a 20 cm blade takes approximately 1 minute. Knives with shorter or longer blades may require slightly less or more time. Once knives have been sharpened using Model 120, resharpening takes less than 10 seconds.
