Japanese vegetable knife, produced by Miyabi, with a 9 cm blade, made from corrosion and shock-resistant stainless steel.
Like any other knife from MIYABI, this knife stands out for its beauty and extremely sharp blade.
Features:
- The blade of the knife is composed of 101 layers.
- Symmetrical blade made from special hard MC63 steel (which includes Cobalt for added corrosion resistance, Molybdenum for increased hardness, and Vanadium for long-lasting sharpness) wrapped in 101 layers of stainless steel with a design similar to Damascus blades.
- The blade is tempered through the CRYODUR® cryogenic process at -196 °C, ensuring very high hardness.
- The symmetric Honbazuke blade with ultra-sharp edges ensures maximum cutting precision.
- The ergonomic Japanese handle, in the shape of the letter "D", provides extremely easy and comfortable handling, allowing for controlled and balanced movement.
