Steaks and stews
Slow cooking also has the advantage of turning any piece of meat into a tender, melt-in-your-mouth steak.
Whether you are making boeuf bourguignon or a traditional Romanian stew, you will enjoy the ease of preparation: from sautéing the ingredients on the stove, to transferring them to the oven, over low heat. The slow-cooking technique gives the foods enough time to harmonize their flavors into a remarkable dish!
Fine sauces and creams
Sublime is your slow-cooking specialist: slow and delicate cooking, at low temperatures, a true treat for the ingredients and for your senses.
You can prepare even the finest creams and velvety sauces. Sugars in a caramel sauce, for example, are heated slowly, without burning or overcooking.
French fries and other deep-fried dishes
You can use Sublime cookware to cook at high temperature, whether you are searing steaks, sautéing vegetables, frying potatoes, or deep-frying crispy chicken pieces. However, we do not recommend overheating the cookware or heating it empty.
Homemade bread
Let's not forget that we are talking about a Cocotte or Dutch Oven - whatever you want to call it. Meaning those stockpots with lid, usually made of cast iron, from which the bread comes out exactly like from an artisan bakery: golden, crispy and with a fluffy core, crossed by generous alveoli.

Like a fine wine, Sublime cookware gets better with age: repeated use will create a natural non-stick coating over time that also contributes to the flavor of your dishes. Treating them with oil and heating them is not necessary, as is the case with cast iron or steel cookware.
Directions for use for best results
Before using the cookware for the first time, remove all labels, using a solvent if necessary, then wash and dry it carefully.
Choose a burner or a cooking zone located on the hob that is smaller or similar in size to the base of the ceramic cooking pot to prevent food from burning.
While cooking meat or stews, food buildup can form on the bottom of the cooking pot as the juices caramelize. Scrape them off with a spatula and stir them back into the sauce to add flavor and color to your dish.
Taking care of Emile Henry Sublime cookware
When the cookware is hot, avoid direct contact with cold surfaces or cold water. Place the cookware on a neutral surface, such as a pot rack, wooden chopping board, or kitchen towel.
The cookware in the Sublime range are dishwasher safe. If you find food remnants stuck to the bottom of the cookware after washing it, fill the cookware with a mixture of hot water and white vinegar, then bring it to a boil. Once it has cooled, scrub the cookware with a sponge and rinse thoroughly. You can use an abrasive sponge if necessary, but never use bleach to avoid damaging the material.
Ceramics of the Sublime cookware is very resistant. However, the cookware will crack if dropped or hit, being a ceramic material. However, we are confident in your care and skill in the kitchen.
