The 15° Asian knife sharpening module is specifically designed to achieve a factory-quality edge on all Asian-style knives. It is compatible with the Chef's Choice Commercial EdgeSelect Diamond Hone Model 2100 electric sharpener for Asian-style blades and any other knives with a 15° cutting angle.
With three sharpening stages, the device allows for precise sharpening, tailored to the specific use of the knives. Each sharpening stage serves a specific purpose and must be performed correctly, so that the knife blade is properly sharpened, shaped and polished, thereby creating a Trizor-style cutting edge (a Chef's Choice-patented 3-step sharpening system that creates a burr-free triple-bevel edge, that will stay sharp longer than conventionally sharpened knives).
The 15° Euro/American knife sharpening module is designed to sharpen household knives (chef's knife, Santoku knife, bread knife, filleting knife), pocket knives and certain hunting knives. Do not attempt to sharpen scissors, axe blades or any blade that does not fit freely into the slots.
In Stage 1 (sharpening), the abrasive diamonds will sharpen the blade by creating micro-notches along the facets on each side of the edge.
Stage 2 (shaping), which uses much finer diamonds, creates a second, much more clearly defined angle on the facets - a few degrees greater than the angle developed in Stage 1.
In the 3rd Stage (polishing), ultra-fine precision discs, set at a slightly larger third angle - polish and grind the facets immediately adjacent to the blade, creating the third micro-bevel and producing a microscopically thin, straight and super-polished cutting edge of astonishing sharpness.
Serrated blades can also be sharpened, using only the last stage to avoid removing too much material from the serrations.
Always make sure the knife blade has been thoroughly cleaned before starting the sharpening process.
The complete sharpening process for a knife with a 20 cm blade takes about 1.5 minutes and for knives with shorter or longer blades it may take less or more time. Once knives have been sharpened using the 15° Asian Style knife sharpening Module, resharpening takes less than 1 minute.
The downward blade movement in each of the slots is controlled by a blade stop plate that positions the knife blade optimally and safely when touching the abrasive discs without damaging the sharp edge that is formed. The device therefore allows effortless handling in complete safety.
The sharpening module is provided with rails and allows for quick removal or installation to the Chef's Choice Commercial EdgeSelect Diamond Hone Model 2100 electric sharpener by sliding.
The sharpening module is easily removable, allowing for efficient cleaning whenever needed, whether by hand or in a commercial dishwasher.
The knife sharpener shall be maintained only by manually wiping it down with a damp cloth.
