The 15° ceramic knife sharpening module is specially designed to obtain a factory-like quality edge for all the ceramic knives. The module can be used on Chef'sChoice® Commercial EdgeSelect® Diamond Hone® Model 2100 electric knife sharpener for European / American style blades and any other metal knives with a sharp edge at 15-20°.

The Chef'sChoice® Ceramic Knife Module has been developed with sharpening discs containing an advanced blend of diamonds and patented materials for complete sharpening of ceramic knives.

With its sharpening stages, the device will allow for precise sharpening, which will be done depending on the knives' purpose. Each sharpening stage has a precise role and must be carried out properly, so that the knife blade be well sharpened, shaped and polished, thus, creating a Trizor® type edge (a patented 3-stage Chef's Choice® sharpening system that creates a burr-free triple edge that will stay sharp for longer than in the case of conventionally sharpened knives).

The 15° ceramic knife sharpening module is designed to sharpen domestic use knives, pocket knives and certain sports knives. Do not attempt to sharpen scissors, ax blades or any blades that do not fit freely into the slots.

Stage 1 (sharpening): Some ceramic knives may vary significantly from the industry 15°  standard and even vary from one side of the blade to another. This 15° Ceramic Knife Module shapes the blade up at 15° angle and may require that the edge be pulled through several times in Stage 1 to shape up the ideal total angle of 30°,  namely 15° on each side of the blade. NOTE: For those familiar with metal knives, the sharpening of ceramic knives will NOT develop burrs.

Stage 2 (modeling), a much finer set of diamond sharpening discs are used to prepare the knife for the final grinding in Stage 3.

Stage 3 (grinding), with its unique abrasive diamond composition of the sharpening discs, is critical to obtaining sharp edges on ceramic knives and creates an even sharper edge than the one coming out of the factory, a result unmatched by any other sharpener on the market.

Always make sure that the knife blade has been thoroughly cleaned before starting the sharpening process.

The complete sharpening process for a 20-cm blade knife takes about 2 minutes, and for knives with shorter or longer blades, it can take more or less time. Once the knives have been sharpened using the 15° Ceramic Knife Sharpening Module, resharpening takes less than 1 minute.

The downward movement of the blade in each of the slots is controlled by a blade edge stopping plate that positions the knife blade optimally and safely when touching the abrasive discs without damaging the sharp edge to be shaped up. The device therefore allows effortless and safe handling.

This 15° ceramic knife sharpening module is equipped with a built-in diamond cleaning accessory, which can be used if necessary to clean any foods remnants or sharpening residues from the surface of the polishing / grinding discs of Stage 3.

The sharpening module is easy to detach, thus allowing its efficient cleaning whenever needed, whether it is done manually or in the dishwasher (for domestic use or for commercial use).
