Gyutoh knife, Japanese chef's knife, 20 cm long blade, corrosion and shock resistant, Miyabi brand.
This Japanese gyutoh knife or chef's knife, features a MicroCarbide steel core consisting of 132 outer plies of steel surrounding the core and forming the unique Damascus pattern on the blade. The knife cutting edge is hand-sharpened using the traditional Honbazuke method and is symmetrical, so the knife can be used by both right- and left-handed people.
The wooden handle fits comfortably in your hand, allowing for firm control and effortless repetitive use.
We recommend for the product to be hand-washed, maintained and sharpened on a whetstone and avoiding the use of glass, ceramic or stone cutting boards.
Features:
- The knife blade consists of 133 plies of steel, resulting in a Damascus floral pattern;
- Symmetrical blade is made from special hard MC67 steel (consisting of Cobalt for high corrosion resistance, Molybdenum for extra hardness and Vanadium for a long-lasting sharp blade) and coated in 133 plies of stainless steel with a design similar to Damascus blades;
- Blade treated by CRYODUR® cryogenic process, at -196°C, which ensures very high hardness;
- Honbazuke symmetrical blade with ultra-sharp edges ensures maximum cutting precision;
- The ergonomic Japanese handle, in the shape of the letter ''D'' ensures extremely easy and comfortable handling, allowing for a controlled and balanced movement.
